Fig, arugula and blue cheese salad

IMG_00064 cups arugula
8 oz. fresh figs, washed and quartered
1/4 cup crumbled blue cheese
2-3 tbsp. finely chopped red onion
3 tbsp. olive oil
2 tbsp. balsamic vinegar
freshly ground pepper and salt, to taste

Mix first four ingredients in a salad bowl. Whisk oil, vinegar, salt and pepper in a small bowl, and pour over salad.
